This isn’t the best video, but it’s gotta be shown. I am going to share my weight loss journey with all of my bloggie buddies.  I have been wanting to do this for a while mainly for the accountability aspect of it all, but I have had avoidance behavior for about 3 months. At blissdom09 I met an awesome blogger that did this with her weight loss journey & people loved it. If you prefer Weight Watchers, you gotta check her site out.  Esther at faintstarlite gave me the courage to go for it!

Chex Mix Mixed Eaiser!

WfmwbannerChex Mix is a must around here for Thanksgiving and Christmas. I make triple batches before both holidays. The new recipes on the boxes have instructions for the microwave. I have never had too much luck with that. I like the mix cooked in the oven much better. It taste better toasted. My only problem is getting the stuff mixed without getting it all over the oven. The solution:

Aluminum pans with plastic lids!

Put the mix in the oven to cook in the aluminum pans.

Every 15 minutes, take it out, put the plastic lid on and shake. Put it back in the oven (without plastic lid) and repeat for 45min.

WFMW: Easy Quiche

WfmwbannerThis coming Saturday morning my friend Katie is having a wedding shower. I have the privilege of being one of the people making Quiche for the event. I was told I could make any two Quiches I wanted to. Sounds easy…huh? The problem is, I do want people to love my cooking and I really don’t like to be like everybody else. I have been through about a bazillion recipes. The best recipes always seem to surface on allrecipes.com. LOVE IT! The site is easy to navigate…easy to save favorite recipes and, after you save your recipes, you can print out a shopping list. LOVE IT! Anyway….the quiche recipe that ended up “working for me” is called EASY BACON AND CHEESE QUICHE:

 

Easy Bacon and Cheese Quiche

Cook Time: 50 Minutes
Ready In: 1 Hour
Yields: 6 servings
“This is an easy, delicious quiche that will take no time to prepare and your friends will ask for the recipe! I have made this for numerous office gatherings and everyone raves about it!”
INGREDIENTS:
1 (3 ounce) can bacon bits
1/2 cup chopped onion
5 ounces shredded Swiss cheese
3 ounces grated Parmesan cheese
1 (9 inch) deep dish frozen pie crust
4 eggs, lightly beaten
1 cup half-and-half cream
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a medium bowl, mix the bacon, onions, and both cheeses. Place this mixture in the thawed pie crust.
3. Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
4. Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.

You can add 1/2 c. of anything else that sounds yummy, spinach, cheddar cheese, ham, shrimp, salmon. It is an easy base Quiche for anything else you can come up with.

Oriental Sesame Chicken Strips

ORIENTAL SESAME

CHICKEN STRIPS (serves 4)             X3                                      X6

1/2 cup honey                               1 and 1/2 cups                  3cups               

1/4 cup orange juice                      3/4 cup                             1 and 1/2 cups

2 T. soy sauce                                 6 T.                                   3/4 cup

1 envelope Good Seasons                3                                          6

   Oriental Sesame Dressing Mix

4 boneless, skinless chicken          12                                        24

   breat cut lengthwise into 3/4 inch strips

Mix honey, juice, soy sauce, and dressing mix in large bowl until well blended. Pour marinade over chicken. Thread skewers through each chicken strip. Broil 4 inches from heat or grill over medium coals 8-10 minutes or until cooked through, turning frequently.

If freezing larger quantities: Place chicken strips in freezer bag. Pour marinade over chicken. Remove as much air as possible, freeze flat. On serving day; thaw, thread, and cook using instructions above.

My family loves these. You can cut into strips or leave as whole chicken breast if your in a hurry.  This is a great meal for freezing. I make them in large quantities and freeze them for later. The measurements for 3 meals and 6 meals are included above.
