Oriental Sesame Chicken Strips

Today on WFMW, the theme is to share our best recipes with 5 ingredients or less.

ORIENTAL SESAME

CHICKEN STRIPS (serves 4)             X3                                      X6

1/2 cup honey                               1 and 1/2 cups                  3cups               

1/4 cup orange juice                      3/4 cup                             1 and 1/2 cups

2 T. soy sauce                                 6 T.                                   3/4 cup

1 envelope Good Seasons                3                                          6

   Oriental Sesame Dressing Mix

4 boneless, skinless chicken          12                                        24

   breat cut lengthwise into 3/4 inch strips

Mix honey, juice, soy sauce, and dressing mix in large bowl until well blended. Pour marinade over chicken. Thread skewers through each chicken strip. Broil 4 inches from heat or grill over medium coals 8-10 minutes or until cooked through, turning frequently.

If freezing larger quantities: Place chicken strips in freezer bag. Pour marinade over chicken. Remove as much air as possible, freeze flat. On serving day; thaw, thread, and cook using instructions above.

My family loves these. You can cut into strips or leave as whole chicken breast if your in a hurry.  This is a great meal for freezing. I make them in large quantities and freeze them for later. The measurements for 3 meals and 6 meals are included above.

Jenny Works for Me!

This is Works for Me Wednesday and the best thing that I have going for me right now is my BFF Jenny!

As many of you know, she is “The Coupon Lady.” I’m sure you also know she specializes in CVS stealing shopping. Several weeks ago on WFMW I wrote a post called “Couponing.” The point of the post? Couponing doesn’t work for me. I have issues. I just can’t seem to get it together. I’m not hostile towards saving money, I’m just incompetent.

BFFWfmwbannerLuckily my BFF loves me anyway, despite my handicap. She loves me so much; she took over my shopping for me. Not kidding! She is doing my shopping for me. If you have never seen her in action, you haven’t lived (too strong?) You get my point. She took me with her so I could watch. First of all, she had me go to Tim Horton’s on the way to get a box of Timbits. Because she was hungry? No, to bribe the CVS associates. When we walked in the assistant manager threw up her hands and said, “Yes!!” They know they’re gettin’ suck up treats when they see her comin’.  Gotta love it. Jenny was amazing. I still don’t know how she did it, but I want to show you what she got me (and yes she had me make a list of everything we needed, specific brands and all, and she got it all!) Guess how much? For all of this it was…. trip to cvs

NO LIE! IT WAS AWESOME! She used $29.76 in coupons, did it in four transactions in which she earned $76.00 ECB’s that she turned around and used to pay for it all. If I would have paid for this normally (put it in my cart, took it to the register with no coupons or ECB’s) it would have cost $124.41.

Cooking Club

I have been a member of a cooking club for almost two years now. It is AWESOME! Different people run cooking clubs in different ways, so let me give you the skinny on what we do.

Once a month we each have a cooking assignment. I pick a meal or two and the group approves one of them and it is my meal assignment for the month. I go to the store and get enough ingredients to make 14 of the same meal. Each meal is enough for a family of six. I freeze them flat in my freezer with the directions for cooking and date on the front of the Ziploc.

The whole group then gets together at a designated time and a designated restaurant. We have dinner, laugh, talk, catch up, and then we get out our freezer cookbooks and discuss who will be making what meal for the next month. After dinner and assignments for next month are over, we all go out to our vehicles and exchange meals. Each person gets 2 of each meal. When we are finished swapping, we give hugs and bid each other a good month and go home with 14 frozen meals (7 different ones but two of each.)  Wfmwbanner

These are the top 5 reasons why this works so well for me:

  1. I love the fact that we all get 2 of the same meal because if I have company, I can use both meals and have enough for 12 people.
  2. I did not have to buy all the ingredients for 14 different meals. I just bought a lot of ingredients for one meal and I usually make it when I buy it so I don’t even have to put those away.
  3. I always have ready meals in the freezer when life gets crazy or the DH is taking care of dinner.
  4. I always have ready meals in the freezer when other people are in need.
  5. I don’t have to think about what I am going to make every night. I just pull something out of the freezer, thaw (or not) and cook.

Called Jenny?

On December 9, 2006 I called Jenny…no, not my BFF Jenny, but Jenny Craig. I had come to a point of desperation with my weight. It has been so frustrating because I gained 80lbs in 4 months when I was ill. I know it was due my lack of activity (I was bedridden) and my medication (high doses of steroids.) Of coarse when I was able to walk and use my arms again, I immediately lost around 30lbs. The rest of it has been a pain in my…..well it has actually been directly on my butt for about 5 years now. Over and over again I would lose 15-20lbs and then I would have to have an increase in medication and I would balloon up again. Anyway, I got desperate. I called Jenny. I was so ashamed of my weight I wouldn’t even go to a Jenny Craig center so I signed up online and paid an extra $150/month to have the food delivered to my door. They have a consultant call once a week to talk. Several weeks into it she realized that there are 5 Jenny Craig locations within 10 minutes of my house. She insisted I go in to a center. I’m glad I did.

It took me until my birthday (which was my goal) July 29, of 2007 to get 50lbs off. I was thrilled! I will tell you that I kept it off until about 2 months ago and I gained 15lbs. I went back two weeks ago and I have already lost 7lbs. I enjoy the food, it is easy to grab and go, I don’t have to count calories, I know exactly what I have to eat for the day and I don’t have to go shopping to get anything but the fruit, milk and veggies. I love it. Next time I will go back  if I gain 5lbs. I am not doing 15lbs again.

Advanced Eye Application

Well, I totally forgot that this WFMW is a themed post that is supposed to be how to combat the “Mom, I’m bored” issue that arrives in most households during the summer months. Even though I forgot and didn’t focus on that issue, I can tell you that obviously (watch my video and the videos at www.brothersstudios.com) we don’t experience a lot of boredom around our house. Our kids are involved in our work and our play. Even when they were little, I would pull a chair up to the sink so the girls could help me wash the dishes. Sometimes I would let them play in what I was doing like setting up a sheet tent in the living room while I am folding clothes. They loved that! So, that is my suggestion….involve them as much as possible in what you are doing. They love it and they will not be bored.
