I have been quite sick for about a week. I am not sure what is going on, but I have officially decided that my family doctor is …. well, I am not happy with her at all. This morning I left on a business trip to Seven Springs, PA. Once a year our Mary Kay area has a conference at Seven Springs Ski Resort. It is awesome per usual. I left this morning at 6am so I could arrive by 11:30am for registration and lunch at the resort. Every 30 minutes I had to pull over. I AM SOOOOO SICK!! I felt even worse for my dear friend and her sweet daughter that were following me. They were so sweet about it all. Needless to say, I drove for about an hour and a half and then just waved them on as I again took the exit. It took me a while to get home, but I can say for sure, “There’s no place like home!!!” I am so glad to be here. I am going to put on some comfy pants and a snugly sweat shirt and chillax.
I’m quite content.
I just have to keep myself from thinking about the $168.00 I paid for the conference that I won’t get back, the doctor that I want to shoot for not giving me some kind of med to help this situation, and the hours I have to be in court at 9:15 on Monday……ugh!!!!

We are finally getting our house painted. It has certainly been a long time coming. We have an old downtown Victorian style house. It is unbelievable what it cost to have them painted. We have had estimates from $13,000 to $18,000. Several weeks ago, a painter gave us an estimate of $5,500. AMAZING! Of coarse I wanted to say, “You can start tomorrow!”, but the truth about it is , these days, it is hard to come up with $5,500. Times must be tough for everyone because, I wrote up an offer for this guy to take $2000 right now and $500 the first of each month from December 1 – June 1 and he took it! That is like a six month interest free loan. Anyway, I wanted to put the colors past you and see what you think. I would have loved to have it be blue (my favorite color) but most of the houses on our street are some kind of blue, blue-grey, or grey so … we needed to go with something different. I know that most of my readers follow Jenny at momminitup, and I know you know how she gets her awesome freaky free deals at CVS (if you don’t know, then you gotta check out her Super Saving Saturday tomorrow.) Anyway, she helps me out with my couponing (because I am mentally lacking in that area.) The best part is that ALL of my toiletries, paper products, cleaning products, OTC meds, etc, are REALLY free, because I get $30 free gift cards for my prescription transfers on new prescriptions (one or both of which I always have. I try to get at least two free gift cards a month. Yesterday I went to a different CVS than usual with my script transfer from Walmart. When I got inside I realized that I did not have my insurance card and I didn’t want to look like an idiot if they asked for it, so I drove home to get it. The previous CVS was a bit far from my house (I was stopping in because I happened to be on that side on town for other things) so I drove to a different CVS. I took my empty bottle in and told them I wanted to transfer this script. Did they ask for an insurance card? No, of coarse they didn’t. They said that it would be about 15 minutes. This always means it will be thirty, so I went to my truck and spent 30 nice, quiet, alone, minutes doing my nails. When I got back into the store, the pharmacist said the she had called Walmart and the script had already been transferred but their computer would not tell them where. I happened to have the most recent bottle in my purse which I had not originally given them because the last time I got the script, they had not given me 60, they had given me 6 and I didn’t want them to make the same mistake again. When she saw the bottle, she said “Oh, I called the wrong Walmart, it will only take me about 15 minutes…..15minutes later, she called me up to the counter to tell me that even though I had 2 refills left, my script was expired. AGGHHHH!

This coming Saturday morning my friend Katie is having a wedding shower. I have the privilege of being one of the people making Quiche for the event. I was told I could make any two Quiches I wanted to. Sounds easy…huh? The problem is, I do want people to love my cooking and I really don’t like to be like everybody else. I have been through about a bazillion recipes. The best recipes always seem to surface on allrecipes.com. LOVE IT! The site is easy to navigate…easy to save favorite recipes and, after you save your recipes, you can print out a shopping list. LOVE IT! Anyway….the quiche recipe that ended up “working for me” is called EASY BACON AND CHEESE QUICHE:

“This is an easy, delicious quiche that will take no time to prepare and your friends will ask for the recipe! I have made this for numerous office gatherings and everyone raves about it!”
INGREDIENTS:

1 (3 ounce) can bacon bits
1/2 cup chopped onion
5 ounces shredded Swiss cheese
3 ounces grated Parmesan cheese

1 (9 inch) deep dish frozen pie crust
4 eggs, lightly beaten
1 cup half-and-half cream

DIRECTIONS:

Preheat oven to 400 degrees F (200 degrees C). |

In a medium bowl, mix the bacon, onions, and both cheeses. Place this mixture in the thawed pie crust. |

Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture. |

Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown. |

You can add 1/2 c. of anything else that sounds yummy, spinach, cheddar cheese, ham, shrimp, salmon. It is an easy base Quiche for anything else you can come up with.

My daughter Tosh has been engaged for several weeks. I haven’t been too thrilled about it because she has been a bit estranged from me for the past 6 months. She text me to tell me she was engaged. I went to her apartment the next day to talk to her and take her out to celebrate. My mother showed up and believe it or not, it turned in to a creepy white trash front yard yelling match. Needless to say, I left and hadn’t heard from her in weeks….until Friday.

I was so happy to hear from her. She told me when they were planning on getting married and that she wanted to have an out door wedding. She also asked me to help. I am so excited. I have been mourning her loss for months. Not to this guy, but to the world. It didn’t happen slowly, it didn’t happen with any warning at all. She just moved out.
I’ve spent most of my weekend looking for places to have the wedding and getting info (as much as I could on a weekend) on them. She is coming by today. Pray for me that I don’t do or say anything stupid. Pray for peace. I really want this to be a happy time for her. I just want to be there with her in the midst of it all.
